Quinoa Black Bean Salad

Quinoa and Black Bean Salad is a good baseline salad that is versatile and be be vegan or more paleo-inspired. Spicy beans and seasonal veggies can be custom fit to your liking. Many of my clients like this with chicken however I completely respect a vegan diet and invite people to eat more plant-based more frequently. This is a great dish for on-the-run days where you need quick nutrition and can fill sustained- especially good when you have with eggs or avocado and makes a great breakfast.


*Quinoa is a high protein ancient grain, in fact it's a seed. I use it because It's gluten-free and is more digestible for sensitive diets. I find that many with gut dysbiosis can tolerate quinoa.
