Kale and Kabocha Squash Salad with Kalamata Olives, Radicchio, Miso Vinaigrette

One of my all time favorite recipes from The Bamboo Hut in Koh Phangan Thailand. It's not a Thai recipe perse but uses steamed pumpkin squashes, olives, greens and radicchio with an herbal vinaigrette. Truly yummy combo and I ate it almost every day that I was there. It's more of a mediterranean salad but so hearty it can be eaten alone as a meal.
